On this occasion, we spoke with Isabelle Viale, who discusses Septeo’s vision, the new products that will be unveiled at their booth, and the reasons why Food Hotel Tech is a must-attend event.
Could you briefly introduce Septeo and explain how you support hoteliers?
Septeo is one of the leading French and European software publishers, with a division entirely dedicated to the hospitality industry. But we’re more than just publishers of PMS, RMS, or reservation engines: we infuse your business intelligence into every piece of our software. For me, AI only makes sense if it’s used to support that business intelligence, because a hotelier’s job is to welcome guests—not to re-enter data or make unnecessary clicks.
Specifically, Septeo Hospitality provides a comprehensive solution for all the software needs of the hospitality industry: PMS, CRS, booking engine, channel manager, RMS, BI, secure payment platform, chatbot and callbot, guest review management, high-performance websites… And because the PMS remains the heart of hotel operations today, we offer three options: Asterio, Misterbooking, and Ulysses Suite. A hotel chain, a luxury resort, and a small family-run property do not share the same constraints or the same operational needs—we needed solutions capable of meeting this diversity.

This edition will be marked by the prominent role of AI across our product line, often in the form of AI agents, but not exclusively. Every AI solution we deploy has been designed to serve a specific function within the hospitality industry and to create value on three levels: for the property, for employees, and for the end customer.
In particular, we’ll be unveiling our Revenue Intelligence platform, which truly embodies this philosophy: using AI to support decision-making, not to replace the hotelier. I’m deliberately keeping the details under wraps, but I can already tell you that visitors will be able to see this system in action during a live demonstration at our booth.
Why has Food Hotel Tech become a must-attend event for your company?
Because I’ve been following this event since its very first edition, and I’ve seen just how the organizers—Karen, Raya, Shirli…—have managed to grow it with a true vision.
Food Hotel Tech is not just a gathering of exhibitors: it is a deliberate effort to bring exhibitors and visitors together around substantive themes, with conferences that do more than simply comment on the present—they truly project the market toward the new trends of the future. It is this high standard—this ability to anticipate the challenges of transformation in the hospitality and restaurant industries—that has, over the years, made it a major event on the French scene.
What specific impact did your participation in the trade show have on your business?

Last year, our Witbooking AI booking engine, integrated into Ulysses Suite, received the Innovation Award—an accolade bestowed by a panel of experts that validated all the work we’ve put into applying artificial intelligence to hotel distribution.
Beyond this distinction, the trade show allowed us to arrange meaningful meetings with hoteliers seeking concrete solutions and to engage in discussions with other stakeholders in the ecosystem that have evolved into lasting partnerships. It is this focus on creating lasting value—driven by the organizing team—that makes all the difference.
