Consommé clarifies your F&B data and answers in natural language, with your own figures, in real time.
In a hotel, rooms are managed to the cent. F&B is still run blind. Yet every property already produces a considerable volume of data (sales, bookings, stock, purchasing, HR), scattered across systems that do not talk to each other and far too numerous to be handled by hand.
Consommé is Okoto's industry AI, built specifically for food and beverage. The name is not an accident: in the kitchen, a consommé is a clarified stock. Consommé applies the same principle to a property's data.
You ask it questions in plain language ("summarise this week's margins", "why is food cost drifting?") and it answers with the property's real figures, never generalities. It makes usable a body of data that was not, so decisions are grounded in what actually happens on the floor.
Consommé does not just answer. It monitors continuously, flags a stock variance or a rising food cost, and recommends the right call before the margin erodes. Anyone on the team can use it, with no training.
AI here is not a marketing argument. It is what makes possible what was not: reading, in real time, a volume of data no team has the time to process. Consommé brings to F&B the economic control that only rooms enjoyed, through revenue management.
In practice: margins tracked day by day, recurring tasks automated, time given back to teams under pressure. By making stock variances and cost drift visible, Consommé also cuts food waste and supports traceability through Okoto's CSR and Labels module.
Designed by a hotel revenue management expert (15 years in hospitality, 12 of them in total revenue management, trained at Les Roches) alongside F&B professionals. Launched commercially in July 2026, Consommé is live in two hotels, with two restaurant pilots in preparation. Okoto is incubated at Unitec.
